Lime Cointreau Banana
2 medium bananas
3 tablespoon light brown sugar
2/3 cups (160ml) orange juice
1/2 vanilla bean, scraped
1/2 cinnamon stick
1 tablespoon fresh lime juice
2 tablespoons Cointreau
2 teaspoons navel orange zest, grated
1/3 cup (80g) unsalted butter, softened
1- Bias-cut each banana into 12 pieces; reserve.
2- Heat sugar in skillet over medium heat until golden; stir in 1/3 cup (80ml) orange juice, vanilla bean and cinnamon; bring to simmer; stir in lime juice, Cointreau and zest.
3- Remove from heat; fold in butter, bananas and remaining orange juice.
4- Serve bananas and sauce over coconut ice cream.
