Strawberry soup

Ingredients (serves 4):

  • 200g strawberry purée
  • 200g strawberries
  • 40g sugar
  • 20g mint
  • 320cl water
  • 5cl Cointreau

Method:

  • Step 1

    Infuse the mint in hot water for 20 minutes, strain and keep the infusion

  • Step 2

    Then blend together all of the ingredients in a food processor. Chill and then garnish the dishes with the chopped strawberries

  • Step 3

    Decorate with a mint leaf

  • Step 1

    Add a few small marshmallows and/or macarons
