You’ll be pleasantly surprised with how much a wedge of grilled pineapple or watermelon can spruce up a cocktail. 


  1. Prepare the grill – scrape and oil the grates with an oil that won’t interfere with your drink recipe.
  2. Heat your grill to at least 400-450° 
  3. Stick with fruits that are perfectly firm. Larger fruits tend to work better so they don’t fall through the grates. 
  4. Grill for at least 3 minutes—the grates need time to leave those perfect grill marks. 
  5. Check on your fruit every 2 minutes or so. 
  6. When you’ve reached desired caramelization, flip and grill the opposite side.
  7. Remove from heat, add to your favorite drink, and enjoy.

How to rim a cocktail

A cocktail without a rim is like leaving the house half-dressed. A salted rim can balance out any cocktail. Here’s how.


  1. Run your fruit of choice around the outside of the rim before salting. Lemon, lime, pineapple, whatever—just make sure it leaves enough residue for the granules to catch hold.
  2. Sometimes a fully-salted rim can be overpowering. Try salting half or even one-third of the rim to control the intensity.
  3. Simply roll the outside rim through your salt and tap off any excess.
  4. Experiment with an infused salt that pairs well with the cocktail’s flavor profile. Lemon salt, matcha salt, peppered salt… the only limit is your imagination.
