Grab your cocktail shaker now and let the adventure begin! For our first stop, let us transport ourselves to the legendary Long Bar of the Raffles Hotel in Singapore, and travel back into a bygone era.

The Singapore Sling – a taste of the exotic orient

Packed with tasty liquor and fresh tropical fruit juice, the Singapore Sling is said to have been invented by talented Hainanese Long Bar bartender, Ngiam Tong Boon, back in 1915. According to legend, this classic drink was allegedly created so that well-to-do colonial ladies could conceal the fact that they were drinking alcohol in public – which just wasn’t the done thing back then.

Pink in colour, the cocktail offers the deceptive appearance of harmless fruit punch. But don’t be fooled. An authentic Singapore Sling contains a potent alcoholic mix of cherry brandy, gin, Cointreau, grenadine, and Dom Benedictine, finished with pineapple juice and lime. 

Fans of the Singapore Sling included authors Joseph Conrad and Rudyard Kipling (The Jungle Book and other classic tales). 

This is the recipe served today at the Raffles Hotel in Singapore.

5ml Cointreau
30ml The Botanist gin
15ml cherry brandy
5ml Benedictine
15ml fresh lime juice
60ml fresh pineapple juice
1 dash Angostura bitters

Combine all ingredients in a cocktail shaker
Add ice and shake until well-chilled
Strain into a chilled highball glass
Garnish with a pineapple leaf

To this day a Singapore Sling and the Raffles Hotel is still a quintessential highlight of any visit to Singapore.

Let’s step out of the fabled Long Bar and into a Chinese noodle market, with a unique cocktail that perfectly captures the flavours of the Far East.

The name of this unique and tasty cocktail means Great Grandmother in Mandarin.  It features the five tastes of Chinese cuisine: salty, spicy, sour, sweet, and bitter.

25ml Cointreau
60ml The Botanist gin
2 slices jalapeño
1 pinch salt

Muddle jalapeño in honey at the bottom of a shaker tin.
Add remaining ingredients and ice.
Shake and strain into a rocks glass over fresh ice.
Garnish with a lemon wheel.

20ml Cointreau
45ml tequila
15ml Disaronno (amaretto)
20ml fresh lime juice
5ml caper salt

Combine all ingredients in a cocktail shaker
Add ice and shake until well-chilled

Royal Bermuda Yacht Club

Long in name and big on flavour, the Royal Bermuda Yacht Club cocktail is a combination of Cointreau orange liqueur, rum, falernum (a sweet syrup with a slightly spicy flavour) and fresh lime juice. This less well-known classic tropical cocktail is a delicious variation on a daiquiri and a refreshing and tasty drink. Legend has it that the cocktail only obtained its‘ Royal’ prefix after His Royal Highness Prince Albert, scion of British Royalty and Prince of Wales, became club patron.

15ml Cointreau
45ml Mount Gay Silver Eclipse
5ml Falernum
20ml fresh lime juice

Combine all ingredients in a cocktail shaker
Shake with ice.
Strain into a martini or coupe glass

45ml Cointreau
30ml The Botanist Gin
30ml cranberry juice
15ml fresh lime juice

Add Cointreau, The Botanist Gin, cranberry juice, and fresh lime juice into the shaker.
Add ice and shake until chilled. Fine strain into a coupe glass.
Garnish with a marigold.

20ml Cointreau
45ml of vodka
15ml fresh lime juice
15ml cranberry juice
60ml champagne to finish (approximately)

Add Cointreau, vodka, fresh lime juice, and cranberry juice to shaker.
Add ice and shake until chilled. Fine strain into a champagne flute.
Top with champagne, pouring slowly to prevent overflow.
Garnish with frozen cranberries.

The Mai Tai – a taste of island life

Is there anywhere on earth more seriously chilled out than a South Pacific island?

Created in 1944 by Victor Jules Bergeron known as Trader Vic, The Mai Tai is a classic cocktail made with Cointreau orange liqueur, rum, orgeat syrup, and lime juice. Invented in California and inspired by the tastes of the Pacific, the name of this drink is taken from the Tahitian phrase "mai tai-roa aé", which means "out of this world the best!"

Try mixing one today and we’re sure you’ll agree.

15ml orgeat syrup
20ml fresh lime juice

Combine all ingredients in a cocktail shaker
Add ice and shake until well-chilled
Strain into a tiki or a highball glass filled with ice

45ml Cointreau
45ml sweet vermouth
4 dashes Angostura bitters

Combine all ingredients in a chilled mixing glass.
Add ice and stir until well-chilled.
Strain into a chilled coupe or cocktail glass.
Garnish with a lemon twist
