Lime Cointreau Banana

Ingredients
2 med bananas
3 Tbsps light brown sugar
2/3 cups (16cl) orange juice
½ vanilla bean, scraped
½ cinnamon stick
1 Tbsp fresh lime juice
2 Tbsps Cointreau
2 Tsps. navel orange zest, grated
1/3 cup (75g) unsalted butter, softened
Preparation
1 - Bias-cut each banana into 12 pieces; reserve.
2 - Heat sugar in skillet over medium heat until golden; stir in 1/3 cup (8cl) orange juice, vanilla bean and cinnamon; bring to simmer; stir inlime juice, Cointreau and zest.
3 - Remove from heat; fold in butter, bananas and remaining orange juice.
4 - Serve bananas and sauce over coconut ice cream.
