Strips of duck breast

Ingredients (serves 4):

  • 15-20 strips of duck breast
  • Salt, pepper
  • Cointreau
  • Side dish: celeriac purée or mashed potatoes or turnips

Method:

  • Step 1

    Heat a tablespoon of olive oil in a frying pan

  • Step 2

    Arrange the strips of duck breast on skewers

  • Step 3

    Season with salt and pepper

  • Step 4

    Lower the heat and cook for a few minutes until the meat is pink in the centre, then deglaze the pan with Cointreau

  • Step 5

    Arrange all of the elements on a plate
