Vitamin booster

INGREDIENTS:

  • 4 oranges
  • 2 grapefruits
  • 75ml orange juice
  • 75ml water
  • 75g sugar
  • 1 pod vanilla
  • 8cl Cointreau

Method:

  • Step 1

    Bring the orange juice, water and sugar to the boil in a saucepan along with the seeds scraped from the vanilla pod

  • Step 2

    Pour into a mixing bowl and leave to cool

  • Step 3

    Add Cointreau and then put back into the fridge

  • Step 4

    Segment the oranges and grapefruits, removing the skin and pith. Store in the fridge

  • Step 5

    Serve in iced cocktail classes, placing orange and grapefruit segments in the bottom and covering with the iced juice

  • Step 6

    Decorate with a mint leaf
