

Ingredients:
- Ingredients for the dough:
- 325g flour
- 16cl milk
- 1 small egg
- 15g butter
- 1 tbsp honey
- 12g fresh baker’s yeast
- 1/2tsp salt
- 2tbsp sesame seeds
- 1 egg yolk (for glazing)
- Ingredients for the garnish:
- 200g minced beef
- cheese slices for burgers
- 30g butter
- gherkins, ketchup, mayonnaise, salt, pepper

Method for the dough (steps 2 to 11):

Pour the flour into the mixing bowl and scoop out a little well in the centre

Add the salt, honey and egg, then the yeast (after dissolving it in a tablespoon of warm milk) to the well

Next, add the chunks of softened butter

Pour the milk into the centre of the mixture

Knead by hand or in a food processer with a dough hook until the dough is smooth.

Roll into a ball, cover with a tea towel and leave the dough to rise in a warm place until it doubles in volume

Once the dough has risen, press it to remove any air bubbles then divide into small segments of equal weights and roll into balls

Place the little balls onto a baking tray covered with greaseproof paper and glaze with egg yolk using a pastry brush, then add a pinch of sesame seeds

Leave to prove in a warm place under a clean tea towel for a further 30 minutes

Bake for approximately 10 minutes in a pre-heated oven at 200°C

Method for the hamburgers (steps 13 to 18):

Once the buns have cooled, cut in two

Season the minced beef with salt and pepper

Shape into patties the same size as the buns

Cook the mini patties in a hot pan with a little butter

Cut the cheese to the same diameter

Brush the inside of the bun with ketchup and mayonnaise, add a slice of gherkin, the mini patty and a slide of cheese, then add the top half of the bun
