Cointreau financiers

Ingredients for 12 financiers:

  • 150g icing sugar
  • 70g ground almonds
  • 35g flour
  • 4 egg whites
  • 100g butter
  • 25g orange zest steeped in 3cl of Cointreau


  • Step 1

    Pre-heat your oven to 180°C

  • Step 2

    Whisk the icing sugar, flour and ground almonds together in a bowl. Beat the egg whites until frothy. Fold them into the first mixture

  • Step 3

    Heat the butter in a saucepan over a low heat to create a beurre noisette

  • Step 4

    Pass the melted butter through a sieve and add it to the mixture

  • Step 5

    Carefully fold in the steeped orange zest

  • Step 6

    Fill your financier moulds using a piping bag

  • Step 7

    Bake at 180°C for 15 minutes
