Mini salmon and caviar bites


  • 500g puff pastry
  • 200g cream cheese (Philadelphia or similar)
  • 10 sprigs chives
  • 6 slices smoked salmon
  • 1 lemon
  • 30g caviar


  • Step 1

    Roll out the pastry and use a biscuit cutter to cut out 60 fluted discs measuring 3cm in diameter

  • Step 2

    Using a smaller biscuit cutter, pre-cut the centre of half of the discs. Place them on top of the other discs

  • Step 3

    Brush the 30 puff pastry cases you have just made with beaten egg

  • Step 4

    Place the puff pastry cases on a baking tray lined with greaseproof paper

  • Step 5

    Bake for approximately 15 minutes

  • Step 6

    Leave to cool and remove the pastry lid

  • Step 7

    Stir the cream cheese to soften it, and season with pepper, lemon and fresh herbs

  • Step 8

    Use this mixture to fill the puff pastry cases and top with a sliver of smoked salmon and a small amount of caviar
