Outstanding chutney


  • 500g peeled tomatoes
  • 2 onions
  • 2 cloves of garlic
  • 1 generous tablespoon olive oil
  • 20g butter
  • 1tbsp balsamic vinegar
  • 70g sugar
  • 1 pinch of cardamom
  • 1 pinch of paprika
  • 1 pinch of salt
  • 20cl Cointreau


  • Step 1

    Melt the butter and the oil in a saucepan

  • Step 2

    Add the garlic and sliced onions. Sweat over a gentle heat without browning, then add the chopped tomatoes. Leave to simmer for at least 30 minutes

  • Step 3

    Put the sugar in another saucepan and cover with water to make a caramel

  • Step 4

    As soon as it colours, pour in the balsamic vinegar and continue to stir over the heat until it has completely dissolved

  • Step 5

    Add the tomato mixture, the salt and the spices and leave to simmer for about another hour. Add the Cointreau at the end of the cooking process

  • Step 6

    May be kept in the fridge for several days to accompany meat, grilled dishes and charcuterie
