Red berry crumble tart

Ingredients (serves 8):

  • 400g red berries (frozen and defrosted in advance)
  • 1 organic lemon (only the zest)
  • 1 egg
  • 200g softened butter (plus a little more for the cake tin)
  • 200g caster sugar
  • 500g flour (plus a little more for the cake tin)
  • 5g baking powder
  • 1 pinch of salt
  • icing sugar


  • Step 1

    Grease and flour a cake tin (preferably loose based)

  • Step 2

    Pre-heat the oven to 180°C

  • Step 3

    Cream the butter and sugar together

  • Step 4

    Add the zest and then the egg

  • Step 5

    Mix together the flour, baking powder and salt

  • Step 6

    Add a few spoonfuls to the mixture and stir again

  • Step 7

    Pour in the remaining flour and rub in with your fingertips until the mixture resembles coarse breadcrumbs

  • Step 8

    Tip 2/3 of the mixture into the buttered and floured cake tin, then tamp down with your hands

  • Step 9

    Spread the red berries in an even layer and crumble the remaining mixture on top

  • Step 10

    Bake for around 45 minutes on the lowest oven shelf

  • Step 11

    Turn out of the cake tin and leave to cool

  • Step 12

    Dust with icing sugar
