Chic & choc salad

Ingredients (serves 4):

  • 1 balled melon
  • 2 peaches or pears cut into slices
  • 10cl Cointreau
  • 1tbsp honey
  • 250g lamb’s lettuce
  • 15 leaves chopped basil
  • 150g sweetcorn
  • 100g finely sliced button mushrooms
  • 12 slices smoked duck breast
  • 10 halved hazelnuts
  • 1tsp brown sugar
  • For the vinaigrette:
  • 1tbsp French mustard
  • 1tbsp balsamic vinegar
  • 1tbsp Cointreau
  • 2tbsp cider vinegar
  • 4tbsp olive oil
  • A few crushed pink peppercorns

Method:

  • Step 1

    Pour the Cointreau and the honey over the chopped fruit and stir gently

  • Step 2

    Arrange the lamb’s lettuce, chopped basil and the sweetcorn mixed with the vinaigrette on a large plate, then top with the Cointreau and fruit mixture

  • Step 1

    Decorate with the mushrooms and the duck breast. Sprinkle with the hazelnuts and brown sugar
