Sesame and chorizo pain au lait

Sesame and chorizo pain au lait

  • 170g chorizo
  • Sesame seeds
  • 20cl milk
  • 500g flour
  • 2 eggs
  • 20g butter
  • 15g fresh baker’s yeast

Method:

  • Step 1

    Combine the eggs, flour, milk and baker’s yeast

  • Step 2

    Knead the dough until it reaches a smooth consistency

  • Step 3

    Add the butter, then knead again

  • Step 4

    Shape into a ball and leave to rest for 2 hours at room temperature

  • Step 5

    Knead the dough again

  • Step 6

    Roll into little balls around one or more pieces of chorizo

  • Step 7

    Place each ball in a muffin tin or on a baking tray lined with greaseproof paper

  • Step 8

    Leave these balls to rest for another hour

  • Step 9

    Pre-heat your oven to 180°C

  • Step 10

    Brush the balls with a mixture of beaten egg and sesame seeds

  • Step 11

    Cook for approx. 12 minutes at 180°C

  • Step 1

    Turn the balls over and cook for a further 2 minutes until they are golden brown on all sides
