Tabbouleh

Tabbouleh

Ingredients:

  • 500g medium semolina
  • 500g approx. tomatoes (pour boiling water over them to remove their skin, then cut into quarters)
  • 1 cucumber
  • 5 onions
  • 5 sprigs of parsley and mint
  • 5 lemons (juice only)
  • olive oil (same volume as lemon juice)
  • Salt and pepper

Method:

  • Step 1

    Chop the vegetables into large chunks using a food processor

  • Step 2

    Add to the raw semolina and mix in the seasoning

  • Step 1

    Place in the fridge overnight and enjoy the next day
