Vanilla crème brûlée

Ingredients (serves 4):

  • 5 egg yolks
  • 80g caster sugar
  • 1 pod vanilla
  • 20cl full-fat milk
  • 3cl Cointreau

Method:

  • Step 1

    Combine the ingredients in the order in which they are listed and strain the mixture into ramekins

  • Step 2

    Cook at 90/100°C for approximately 1 hour

  • Step 3

    Place in the fridge and leave to cool completely

  • Step 1

    Before serving, dust each ramekin with a teaspoon of brown sugar and place under the grill so that the top becomes caramelised
