In a blender assemble: - 1 bunch of blanched mint (15 seconds boiling water and 1 minute ice water)- 300g fresh water- 30g powdered sugarBlend and filter
Soften 2 gelatin sheets in cold water
Heat the mint water over low heat and add the gelatin sheets
Put everything in a siphon with 2 cartridges of NO2
Leave to stand for 2 hours in a cool place and serve
