Scallop burger

Scallop burger

Ingredients (serves 4):

  • 16 high-quality scallops
  • 2 small Granny Smith apples
  • 100g baby spinach (or rocket)
  • Olive oil
  • Lime
  • Dill
  • Salt and pepper
  • Cointreau Cuisine

Method:

  • Step 1

    Use a mandolin to cut the scallops into fine slices (chilling the scallops in the freezer for a few minutes beforehand may make them easier to cut)

  • Step 2

    Season the slices with a mixture of olive oil, lime juice and zest, salt, pepper, and a few sprigs of dill

  • Step 3

    Use the mandolin to slice a Granny Smith apple vertically, then use a biscuit cutter to cut out the core to remove the pips

  • Step 4

    Flash fry on each side with a little salted butter until crunchy to the taste and drain

  • Step 5

    Reassemble the apple by alternating slices of apple and slices of scallop

  • Step 6

    Place the apple in the oven for 3-4 minutes at 180°C until it is warm all the way through. Meanwhile, arrange the baby spinach in a ring on each plate and season with a vinaigrette of olive oil, lime juice, Cointreau Cuisine, salt, pepper and a little Madras curry powder
